  1. Obtain fresh sardines from fish market.
  2. Clean fish and remove head if you want. SPLIT each fish on one side. You can also leave heads if you want to.
  3. In a bowl mix bread crumbs, cheese, raisins, pignoli and season with salt and pepper.
  4. Mix bread crumb mixture.
  5. Place fish on pan and lightly oil fish, stuff fish with bowl mixture.
  6. Close with toothpicks and bake in pre-heated oven at 375 for about 20 minutes. While fish is cooking, lightly pour vinegar over fish.
