Zuppa di scarola: Escarole soup, this is like Italian wedding soup except not with meatballs. It is popular in the United States, where it is a staple in many Italian restaurants.

Instructions
  1. Wash the escarole.
  2. Sauté the escarole in 2 tablespoons of olive oil, adding a little salt and pepper.
  3. Cut up square pieces of peccorino romano cheese.
  4. Add water, or chicken stock to pot and let simmer for 15 minutes.
  5. Add cut cheese to pot and serve.
